Instructions:
·
In
a large pot, bring the vegetable broth to a boil.
·
Add
the udon noodles and cook according to package instructions, usually around 5-7
minutes, until tender.
·
In
the last minute of cooking, add the bok choy and stir gently to cook.
·
In
a small bowl, mix together soy sauce, minced garlic, and grated ginger.
·
Once
the noodles are cooked, reduce the heat and stir in the soy sauce mixture and
sesame oil.
·
If
desired, crack an egg into the pot and let it poach for a minute or two until
desired doneness.
·
Serve
the noodles and broth in a bowl, garnished with sliced green onions.
